Remember to use an appropriately sized oxygen absorber when packaging freeze-dried food into Mylar for long-term storage. If you use glass and plan to be in and out of the jar frequently, I would not use an oxygen absorber. I would, however, use smaller jars to limit the amount of food that is repeatedly exposed to air.
